"Thoughts Along the Way"
For those of you on Facebook you're familiar with those thoughtful quotes posted from time to time by friends and family. I printed up a bunch as photos and put some on the back hallway of church where notices of up coming events are posted with a sign telling people they may take one or two for themselves or to give away. They may also add ones of their own.

My "Amazing" Jelly Roll Squares
1. First I sewed together2 sets of 4 jelly roll strips
2. Then I squared them off to 8" x 8".
3. Next I placed them right sides together, with one horizontal, one vertical.
4. Sew 1/4" seam around all 4 sides.
5. Cut through the two squares on the diagonal.
6. Turn and cut again on the diagonal.
7. You now have 4 triangles
8. Open them up into 4 squares that you sew together to make 1 large square

Apple Cinnamon Teff Pancakes, A Gluten-Free Recipe

My standard pancake recipe is adapted from:

Dry Ingredients:
2 cups dark brown teff flour*
1/2 cup tapioca flour
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon sea salt
1 tablespoon cinnamon
Wet Ingredients:
2 cups non-dairy milk
1/2 cup unsweetened applesauce
2 large organic eggs
3 tablespoons melted virgin coconut oil
3 tablespoons pure maple syrup (Grade B)
Definitely not on-hand ingredients for most people though... The things you learn to cook and eat while going gluten free... Have not used white flour or sugar in years with the exception of confectioners sugar for cake frosting.
Anyone with joint pain (arthritis type) should consider trying a gluten free diet to see if it helps. The last doctor I saw for a physical recommended it (of course I chose him because he has a reputation of paying attention to nutrition).
Also now learning about the importance of vitamin K2 (and D) in preventing tooth decay, osteoporosis and heart disease. It helps the body deposit calcium where it belongs (bones and teeth) and not where it does not belong (arteries). Food sources include natto (Japanese fermented soybeans), goose liver pate and certain cheeses, such as Gouda. Natto has 10 times more than the next in the list but is an acquired taste to say the least. Also available in pill form...

*Teff flour comes from a tiny grain (teff) that is common in Ethiopia. Nutritious and tasty. Seems that it prevents most people in that country from having anemia despite much lower animal product consumption...

Fluffy Pancakes
I was in the mood the other night for pancakes for dinner.
This recipe was the first one that happened to turn up on my search and it is excellent!!
No more box mixes for me! I like that it has "on-hand" ingredients.
Save it for Shrove Tuesday, February 12th, 2014!

Fluffy Pancakes Makes 8 pancakesIngredients
3/4 cup milk
2 tablespoons white vinegar (I used cider vinegar and it was fine.)

1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
-------------------------------------------------------------------------------
1 egg
2 tablespoons butter, melted
-------------------------------------------------------------------------------
cooking spray
Directions
1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
Note: Batter will be very thick. Resist the temptation to thin it by adding more milk. That thickness is the "fluff"!
